The chocolate muffin can be prepared with 3 different sugars, it’s interesting to see how the PRAL  of the cake changes.

Refined cane sugar        PRAL 6,6
Brown Sugar (organic)   PRAL – 0,57

Method 

In a container mix the sugar with the eggs until dough is smooth.In another container melt the butter until it becomes liquid and put into the mixer with the flour, cocoa, baking powder and milk.

Mix everything with eggs and sugar.

Add, stirring slowly, the chocolate in chunks.

Cover the baking tin with parchment paper and pour the cream.

Bake in oven, pre-heated at 180 ° after 30 minutes the chocolate cake muffin is cooked.
